With spring bursting into bloom across Israel, one of the most beautiful regions to visit right now is the Valley of Springs, located between the Jordan Valley, Mount Gilboa, and the Lower Galilee. Alongside its gorgeous landscapes, the Valley of Springs offers a wide variety of activities and attractions, including fascinating archaeological sites such as a virtually intact Crusaders’ fortress, breathtakingly beautiful hiking trails, fantastic wineries, and more. There are many luxurious accommodation options in the area, as well as top-notch restaurants and eateries that champion local produce and farming. Now is also a great time to enjoy the desert, the winter rains having replenished the streambeds, and nurtured the vegetation. The Moa Living Resort, nestled deep in the Arava, offers an accommodation experience geared entirely towards enhancing physical and mental wellbeing. It is a beautiful resort complex built with an entirely ecological approach and in complete harmony with the surrounding desert landscape.
We spent 24 relaxing hours there, and came back with impressions and recommendations. This month we also bring to you a special article about padel - the new game that has taken Israel and the world by storm. Slowly but surely, padel has woven itself into the fabric of Israeli life, becoming the country’s new way of making friends and connecting with people, with more than 140 new padel courts having been built across the country, and new ones opening each month. And as always, our magazine is full of ideas and recommendations for what to see and do this month, with all the main cultural highlights and events. And to mark International Women’s Day, which occurs March 8th, our food section is entirely dedicated to restaurants headed by Israeli women, trailblazing chefs masterfully reshaping the Israeli culinary landscape. The Atlas hotel chain wins the Booking.com Traveler Review Award Israeli hotel chain “Atlas” has won the 2026 Booking.com Traveler Review Award with an incredible average rating of 9.0 for all its 15 locations combined. The Booking.com awards are a prestigious annual award attributed by the tourism platform to hospitality establishments around the world, based on verified guest reviews that consider various parameters such as level of service, cleanliness, comfort, and overall experience. The chain’s Tel Aviv hotels, Backstage and Fabric, each received a score of 9.4, while the Atlas coastline locations, Shalom & Relax and Yam, each obtained a score of 9.2.
Reopening of Ad’ad Spring in Emek Yizarel Thanks to funding by the Israel Lands Authority (ILA) the Ad’ad Spring in Emek Yizrael has been entirely restored and reopened to the public. The spring and surrounding area have been transformed into a beautiful eco-park and is part of a more extensive long term plan to restore all of the wetland habitats of the Kishon river basin. This plan will involve improving the quality of the water as well as a variety of safety reinforcements to make the area safer and more accessible. As part of the renovation of the Ad’ad Spring, the spring’s floor was tiled with stone to prevent sediment drift which can impair the quality of the water.
A new boutique hotel opens in Jerusalem The new boutique hotel Jrose has recently opened its doors in central Jerusalem near the Mahane Yehuda Market. Built at an investment of millions of shekels, the Jrose brings to the city a contemporary hospitality concept designed for a young audience, couples and businesspeople, looking for a direct connection to the urban pulse of the capital. Sister establishment to the longstanding Eldan Hotel, it has 32 rooms designed in a classic-modern European style and a quiet inner courtyard offering moments of relaxation in the heart of the city, as well as a rooftop with gorgeous views of the city.
The Qasr el-Yahud baptismal site has been reopened after renovation works After extensive renovations at an investment of NIS 25 million, the Qasr el-Yahud baptismal site, (the third most important Christian site in Israel), was reinaugurated last month. The works were carried out thanks to funding by the Ministry of Tourism through the Government Tourism Corporation and involved external infrastructure development, including the construction of changing rooms, a wide wooden deck for safe descent into the river, a worship pergola, and more. The site is a pilgrimage site for hundreds of thousands of pilgrims and tourists who come to immerse themselves in the river here, the place where John the Baptist baptized Jesus, some two thousand years ago. The renovation works were carried out to ameliorate the site’s visitor experience, and more improvements are yet to come, including the construction of an air conditioned auditorium for prayers and events to be held throughout the year and in all weather conditions. Dance Days of Flamenco 2026 | Suzanne Dellal Center, Tel Aviv A rich program with 15 performances and events, including Israeli productions and world premieres, as well as nine outdoor performances open to the general public. More than 40 dancers and musicians are set to participate, including Spanish dancer and choreographer Adrián Santana, who will also serve as head judge for the annual competition (founded by the Adi Agmon Foundation, keren-adi.org). Spanish guitarist Manuel Cazas will be taking part in the opening performance in a special collaboration with the Israeli Andalusian Orchestra–Ashdod. A one-of-a-kind evening of art and creativity with nine groundbreaking dancers, directors, musicians, etc., with each one getting exactly six minutes and 40 seconds to present their work. Among the participating artists: Photographer Tali Ratzker. Her life story tells of immigrating at a young age, an especially complex and challenging integration process, a descent into life o the streets and drugs — and a hobby that became an artistic and emotional outlet that ultimately saved her life: the camera. Today, Ratzker is a respecte artist, casting the heroines of her own life — her mother and her daughter — in photographic sessions that seek to examine her family and ourselves as a society. Food The Mateh Yehuda Rural Food Festival | The Mateh Yehuda Regional Council The Mateh Yehuda Rural Food Festival shines a light on the impressive diversity of the region’s cooking traditions, with three weekends of events and encounters in the home and kitchens of local foodies, chefs, and amateur bakers and cooks. 75 homes, yards, farms and culinary businesses will be open to the public, with food from such diverse cuisines as Kurdish, Moroccan, Iraqi, Yemenite, Tunisian, Ethiopian, Arab, Argentinian, Brazilian, and more. The Valley of Springs is a delightful whirlwind of blossoming fields, lush green meadows, and sparkling natural springs - the perfect setting for a weekend full of nature, visits to historical sites, great food, wine, and endless discovery. Here’s a selection of fun things to do and places to stay in beautiful Emek Ha’Maayanot / By Ariela Aflalo 50 shades of green: what to see and do in Israel’s beautiful Valley of Springs
The Valley of Springs, or Emek Ha’Maayanot in Hebrew, was once described as the “gates of heaven” by 14 th century rabbi, Ishtori Haparchi. There are about forty natural springs dotted across the whole valley that is resplendent with beauty this time of year, after the winter rains have replenished the springs and nourished the land. Full of beauty and things to discover, it’s the ideal destination for a weekend away. Here are our tips and recs for what to see and do while you’re there. The Israel Trek Trail The Emek HaMaayanot loop trail This 140km loop trail starts at Mount Gilboa, crosses the valley in its entirety, and ends at Moshav Menahemia. Recently, the “’Layla” glamping site at Kibbutz Nir David (see box below) launched a new weekend offer that includes guided
hikes along the Israel Trek Trail as well as accommodation. The experience kicks off with a campfire gathering on Thursday evening, with the hike taking place on Friday, passing through historical sites, secret springs, settlements, and kibbutzim. Several route options are available, depending on what areas you feel like exploring. We opted for the Kfar Ruppin Trail that starts at the Amud reservoir that dominates the landscape and extends as far as Mount Gilead and into Jordanian territory. Until recently, cichlid fish were bred in the reservoir but the importation of fish from China has destroyed the industry. The reservoir is part of a wetland restoration project and is a favorite resting area for storks, herons, pelicans, and flamingos – beautiful to observe. The trail can also be accessed independently - by foot, by bike, or by car.

The Dir Balak goat farm, Kfar Ruppin Cheesemaking workshops and guided tours Goat herder and cheesemaker Ile Shevach launched an educational program for primary school children here at her goat farm, “Dir Balak”, while her husband Tzachi manages a coffee cart where visitors can enjoy the wonderful artisan cheeses he makes, as well as fresh salads, pastries, and sandwiches. The couple has also recently launched an agritourism business on the farm, offering guided tours of the area and cheesemaking workshops – a special experience inviting participants to not only discover the cheesemaking process, but also go out pasturing with the goat herd. @dir.balak_kr YomYom Ceramics, Kfar Ruppin Ceramics workshops Yossi Malka Yakir used to be a fashion designer before moving to Kibbutz Kfar Ruppin where he opened a ceramics studio in what used to be the kibbutz chicken coop. He named his studio YomYom, (“day by day” in Hebrew), “to remember to create his designs with renewed passion every single day”, he explains. Yakir creates minimalistic clean-lined tableware inspired by nature designed to beautify everyday life and add meaning and value to the home. events, that of course include coming up close and personal with kangaroos and other animals from the Australian continent, such as cassowaries, emus, flying foxes, and colorful parrots, as well as lantern lit night tours allowing visitors to observe the animals at a time of day that’s usually out of bounds, and learn about their nighttime social patterns, mating behaviors, etc. gangaroo.co.il Keystone Winery, Beit Shean Wine tastings and tours of the vineyard Shimon Edri founded the Keystone Winery in his childhood hometown of Beit Shean, after years spent managing the Bazelet Winery in the Golan Heights. The winery was built inside a basalt structure the Ottomans built next to the old city
of Beit Shean’s “saraya”, i.e., the Ottoman governmental building. Beside it, Edri built a visitors’ center where he conducts wine tastings and workshops. The winery complex also has a kosher dairy bar and restaurant where wine evenings and cultural events take place. keystone_winery The Kokhav Hayarden national park Visit the only quasi-intact Crusader castle in Israel Nestled inside Kokhav Hayarden National Park lies the only complete Crusader fortress in Israel that looks out over Mount Gilead and the Jordan Valley. The castle’s watchtowers, halls, arches, bridges, bathhouse, moat and surrounding wall have remained almost intact to this day. A 1,2km footpath has been built just next to
it, allowing visitors to access the site with ease. The path passes through orchards, the Ein Hayadid spring, and the remains of an ancient settlement. The park is also home to the Yigal Tomarkin sculpture garden and has a camping site in an olive grove where there are water taps, toilets, picnic tables, and lighting. parks.org.il Pure-Te, Kibbutz Beit Alfa Workshops and lectures on the art of tea-making The Kibbutz Beit Alfa tea visitors’ center was established by herbalist and professional tea taster Shimon Sherberg, who conducts fascinating workshops and lectures on the history and art of tea-making, its use as a medicinal plant across cultures, its health benefits, and the culture of tea-drinking around the

When he got back, he began growing his own vegetables and raise his own chickens, with the aim to eventually grow enough produce to be self-sustaining. Padel has quietly woven itself into Israeli life, becoming the country’s new way of forming friendships and connecting, becoming an unexpected sanctuary in a culture defined by 12-hour workdays. With more than 140 courts across the country, and new ones opening every month, padel is growing at a remarkable pace. But part of its magic lies in its simplicity and accessibility. Anyone can step onto a court, pick up a racket, and start playing within minutes. You can play it casually with friends, even late into the night, or pursue it all the way to the professional circuit, where the sport is rapidly gaining momentum and edging closer to a future place in the Olympic Games. Born in Mexico, adapted in Israel The story of padel starts in Acapulco, Mexico, in 1969, when businessman Enrique Corcuera realized he didn’t have the space for a full tennis court. So instead, he built a smaller, enclosed court within the glass walls of his home, net and all. Those glass walls became part of the game itself, letting players use them the way squash players do,

being Danny Roup, a beloved TV personality in Israel, who fell instantly in love with the game. He traveled the country, showing up at sports events, community gatherings, and city meet-ups, introducing padel to anyone willing to listen, even convincing mayors and city officials to pick up a racket and give the game a try. By 2023, Roup and his business partner Yonathan Tal opened Padelnet, in Petach Tikva, which quickly became one of the country’s most professional and respected clubs. Padelnet prides itself on working with instructors who are professionally certified in Spain, bringing world-class training standards to Israel. They host tournaments, develop rising talent, and train athletes that aim
to compete on the international stage. Roup and Tal recently opened an additional club in Nesher, a city about 6 km southeast of Haifa that has become a focal point for players from the Carmel, Krayot, and Haifa region, and all over the north of Israel. “I did everything I could to make sure this sport would truly take off”, says Roup. “I wanted it to become not just a trend, but a community based phenomenon. Just look at the world, 22,000 courts in Spain alone, and massive growth across Scandinavia, Italy, France and England, the momentum is unstoppable. Padel isn’t just a sport. Narkis Alfi | Beina At just 38, chef Narkis Alfi has already worked in some of Tel Aviv’s most prestigious restaurants, including as sous-chef at Eyal Shani’s North Abraxas. She also spent time in Amsterdam, working at chef Moshik Roth’s “&Samhoud Places”, before returning to Israel three years ago when she founded “Beina”, with a menu that effortlessly glides between fine and casual dining, drawing inspiration from the many great chefs she worked with and learned from. Alfi’s dishes beautifully combine European refinement and technique with local flavors and ingredients. During the war with Iran, the blast of an Iranian missile shattered all of the restaurant’s windows; but Alfi picked up the pieces, both literally and figuratively, and is now working on opening another locale, a pizzeria, set to open its doors very soon. beina.tlv

Though entirely plant-based, chef Shirel Berger (35) refuses to label her menu at OPA as vegan – or even to define her place as a restaurant. To her, it is a culinary atelier, a space devoted to celebrating the fruits of the earth. After graduating from the Culinary Institute of America and working in some of the most prestigious restaurants in New York, Berger returned to Tel Aviv and made the
choice to work solely with fruit and vegetables, creating original dishes that are at once minimalistic and ultra sophisticated. Chen Weiss | Rutenberg Born and bred in Kibbutz Afikim, chef Chen Weiss (37) began working at the kibbutz dairy as a teen before eventually managing it for a while before going on to work in the kitchens of the Jerusalem eatery “Chakra”. She moved to Berlin when the pandemic broke out, where she deepened her culinary knowledge, working as sous-chef at Michelin-starred restaurant “Prism”. Back in Israel, Weiss joined the team at Rutenberg, a culinary hotspot in the beautiful region of Emek HaMaayanot where local produce takes center stage. A year ago, following the passing of the restaurant’s head chef Izhar Sahar, Weiss was appointed in his place, and has been deepening the partner, with whom she founded the first branch of “Eats” in 2017, a neighborhood deli-café that offers a delicious array of cookies, cakes, salads, and sandwiches inspired by her love for American food. A second “Eats” café opened two years later. Like many women, chef Michal Epstein Hemo (44), winner of reality tv show “Game of Chefs”, balances a demanding career with a not-less demanding family life. She shares three children with her longtime partner Adva, who is also her business
