Two of the most interesting sites are Hurvat Ethri and Hurvat Madras. The Ethri site includes remains of an ancient synagogue, winepress, water wells, and tunnels that you can explore with the help of a flashlight. At the Madras site, you can see a spectacular mosaic and the remains of a 6 th -century Byzantine church, as well as those of an impressive 10m columbarium, a dove-breeding stone tower, and over twenty underground tunnels and passages. Owner Lina Slutzkin, who until 15 years ago worked in high-tech, discovered it on a trip to Georgia, the country of her birth, and where the technique is still in use. After her trip, she decided to leave her job and become a winemaker, adopting
the Georgian winemaking method, by which the wine is fermented underground inside big terracotta vessels that are lined with beeswax, which reduces the oxygen transfer during the long fermentation process. Today, Slutzkin’s winery is a boutique winery in the heart of the Judean Hills, on a site where archeological remains of an ancient winepress were uncovered, adding yet more meaning to the wine produced here.
