Flame, the Carlton’s new open flame meat eatery, was inaugurated in August 2023. It has a traditional Argentinian charcoal “parilla” at the center of the restaurant, with enormous cuts of meat and mouth-watering steaks sizzling away at all hours. When it first opened, foodies flocked over to get

a taste of the new kid on the block, but then October 7 happened, and the owner was drafted as a reservist and the restaurant closed. After a period of uncertainty, it reopened with celebrity chef Oren Assido, winner of reality T.V. show “Game of chefs” heading the kitchen. His own restaurant

had closed after he himself had been drafted, serving four months as a reservist. Assido seems to have blended in perfectly with the Flame’s atmosphere and food philosophy, creating a new menu with North African influences and lots and lots of top-quality meat. carlton.co.il
