1 ½ cups all-purpose flour 1 teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt ½ cup unsalted butter, softened 1 cup granulated sugar 2 large eggs 1 teaspoon vanilla extract 1 tablespoon lemon zest ¼ cup lemon juice ½ cup sour cream 1 cup fresh blueberries Cream Cheese Icing: 2 cups powdered sugar 1 tablespoon lemon juice 1 teaspoon vanilla extract 1 cup cream cheese, softened ½ cup unsalted butter, softened
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. In a bowl, whisk together flour, baking powder, baking soda, and salt. In a separate bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, lemon zest, and lemon juice. Gradually add the dry ingredients to the wet mixture, alternating with sour cream, until just combined. Gently fold in blueberries. Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Prepare the cream cheese icing: In a bowl, beat the cream cheese and butter until smooth. Add powdered sugar, lemon juice, and vanilla extract. Mix until well combined and creamy.
